The recipe is both simple and delicious: raw fish - usually red tuna - cut into cubes, a few fresh vegetables mixed with coconut milk, sprinkled with lemon juice and seasoned with grated ginger. A pure delight that can also be served with other fish such as mahi-mahi, perch or barracuda and accompanied by manioc or breadfruit. The Horizontal Falls are one of the most spectacular sights in the world. It is, in fact, a natural phenomenon linked to strong tidal currents. The colossal thrust of the water between the cliffs causes whirlpools and a ‘fall’ of up to four metres. Depending on whether the tide is rising or falling, the ‘falls’, as well as being horizontal, are also ‘reversible’: they change direction.
